ELABORATION
First, we peel, clean, dry and chop the chives into small portions.
Later, in a frying pan we cook them over a low heat together with the extra virgin olive oil Magnun Sess Organic, salt, garlic powder, ground pepper or chili powder. We are passionate about Chilean gastronomy, so we usually use chili, also known as aji, but you can use the ingredient you like best.
When the sauce is ready, we reserve it.
In parallel, we add extra virgin olive oil Magnun Sess Organic to a frying pan and, when it is hot, we add the egg and a pinch of salt to fry it. With a wooden spoon, we add oil to the yolk to fry it too. We remove it when it is at our taste.
IMPORTANT: Before adding the egg to the frying pan, it is very important that the oil is very hot, without smoking. Extra virgin olive oil can reach 180-200 ºC without burning.
