Last May 13 was Hummus Day and we prepared an exquisite chickpea hummus. This dish is one of our weaknesses for many reasons but, above all, for how light, healthy and nutritious it is.
Do you know where the word hummus comes from? It comes from Arabic and means “chickpea”, it’s as simple as that. In Spain, for example, we also call it chickpea cream.
This recipe, which was already prepared in ancient Egypt, is a great option for eating legumes in hot weather. There are numerous versions, with lentils, beet or pesto, among others, but there is no doubt that the traditional recipe is unbeatable.

- 400 g of cooked chickpeas
- 70 g of toasted sesame seeds
- 60 ml of water
- 1 garlic clove
- Salt (to taste)
- 40 g of lemon juice
- A pinch of ground cumin
- Parsley or basil
- Black olives (optional)
- Sweet or hot paprika (optional)
ELABORATION
First of all, we wash the chickpeas well to remove the liquid of the preserve and we drain them to deposit them in the glass of a food processor or in the blender. We can use fresh chickpeas, for which we will have to cook them previously.
We add the peeled garlic clove, the sesame, the water, the cumin, the salt and the lemon juice and we grind all the ingredients until obtaining a creamy texture. Although this texture is obtained with a food processor, it can also be prepared with a blender.
Next, add the extra virgin olive oil. Magnun Sess Premium to make this cream more mellow. If we see that it is too thick, we can add a little water or a splash of olive oil.
PRESENTATION
On a bowl we serve this chickpea cream accompanied by toasted pita bread, slices of toasted bread, or even raw carrots. We crown the composition with parsley, basil or black olives (to your taste) and a drizzle of Magnun Sess Premium extra virgin olive oil. We can also add a little bit of sweet or spicy paprika.
