[RECIPE] Lemon-lime sponge cake with olive oil
Surely you have rarely tasted a spongy sponge cake made with extra virgin olive oil. This is because the use of this raw material in baking is not very widespread. However, there are those who do not dispense with it when it comes to making this spongy bun. One of the protagonists of this glamorous cake is Magnun Sess Premium extra virgin olive oil, a raw material whose color, aroma and unmistakable flavor give this cake an appetizing touch, providing all the health benefits of the juice extracted from Picual olives.
INGREDIENTS
- 60 g of Magnun Sess Premium extra virgin olive oil
- 2 eggs size M
- 1 plain yogurt or lemon yogurt 125 g
- 50 ml of juice (lime and lemon)
- 130 g sugar
- 170 g wheat flour
- 7 g baking powder
- Pinch of salt
- Optional: icing prepared with powdered sugar and juice
ELABORATION
Grate the lemon peel and squeeze the juice.
Then mix the eggs, sugar, lemon zest and Magnun Sess Premium extra virgin olive oil and blend. Add the juice, yogurt and continue beating the composition.
Add the sifted flour, mixed with the yeast and the pinch of salt and blend it all with a spatula.
Once you have emulsified all the ingredients, pour them into a greased 18 cm chimney pan and bake at 180 ºC, with heat up and down.
After 30 minutes, prick it with a toothpick and check that it comes out dry, this will indicate that the cake is ready.
Let it cool on a wire rack and, when it is cool, add the icing that you have previously prepared by mixing the powdered sugar in a small bowl to which you have added juice and stirring until you get the icing texture you like best.
PRESENTATION
In a shallow dish, place the desired portion of this spongy cake and… get ready to enjoy it!
