[RECIPE] Pumpkin cookies for Halloween
The scariest night of the year is coming and we can’t resist celebrating this All Saints’ Eve as it deserves. For this, we have prepared these pumpkin cookies for Halloween, very healthy and delicious… and with evoo!
In countries of Anglo-Saxon culture or Celtic heritage, the night of October 31 is celebrated on the eve of All Saints’ Day. A popular festival, of pagan origin but Christianized, which owes its history to the ceremony celebrated by the Celts to commemorate the “end of the campaign”.
This holiday, later renamed Halloween, spread to countless territories and is now celebrated in different parts of the world. This year we want to test the taste buds of our family and friends and we are going to prepare a very sweet surprise for them: pumpkin cookies with olive oil!
For this occasion, we have chosen our recently obtained Premium, only 15 days old. A fresh, early harvest olive juice that you will love.
Pumpkin, tasty and healthy
Rich in water, fiber and carbohydrates, low in fat and cholesterol-free, pumpkin is an autumn vegetable irremediably linked to Halloween. This product, which also stands out for containing carotenes and vitamin A, as well as folates and essential minerals such as potassium and phosphorus, offers an infinite number of combinations in gastronomy, as it has a very pleasant taste and texture.

INGREDIENTS
- 125 of evoo Magnun Sess Premium
- 120 g roasted pumpkin
- 175 g wheat flour
- 1 egg
- 100 g sugar
- Cinnamon to taste
- Chocolate chips (optional)
- Dark couverture chocolate (optional)
- White chocolate (optional)
- Pumpkin, bat and ghost molds
ELABORATION
Peel the pumpkin, remove the seeds and cut it into pieces to place it in the oven at 190-200 ºC. After approximately 1 hour, remove and set aside. The baking time will depend on the size of the cubes, therefore, before removing the pumpkin from the oven we must check that it is roasted.
At the same time, in a bowl, mix the sugar with the Magnun Sess Premium extra virgin olive oil until a paste is obtained and add the egg. Stir the composition until all the ingredients are well emulsified.
Add the pureed pumpkin together with the flour and cinnamon, previously sifted.
Beat the composition until the ingredients are well blended and knead the resulting dough. Then, let it rest for 30 minutes.
After this time, we make small balls, flatten them and place them on baking paper on a tray. We will get the shape using the different molds we have (pumpkin, bats and ghosts).
If we choose the bats, we coat the cookies with dark chocolate frosting. If we opt for the ghosts, we do the same but with white chocolate. And if we choose pumpkins, we can decorate them as shown in the images.
Once decorated and with the oven preheated to 180º C, we will only have to put the tray in the oven for 10-15 minutes, until the cookies are golden brown.
